Grilled New York Steak And Spinach And Cheese Stuffed Mushrooms Recipe

I love to barbeque. I love the way a good steak tastes when it is barbequed correctly. And by correctly, I mean that it was done on a charcoal grill using mesquite, not some glorified and over-priced outdoor stove.

We do it old school here.

Grilled New York Steak:

Ingredients:

  • Cattleman’s Finest New York Steak (as many as you need)
  • Garlic powder
  • Onion powder
  • Fresh peppercorns (red, white, green and black), cracked
  • Paprika
  • Kosher salt
  • Steak Sauce (I use Lea & Perrin’s )
  • Worcestershire Sauce (Lea & Perrin’s )

I don’t measure anything, so you will have to adjust your ingredients to suit you. But generally 1.5-2.5 Tbs. of each ingredient is enough for each steak

Trim excess fat from steaks (you must leave some for flavor)

Mix spices in a bowl to taste then rub on both sides of steak. Leave for one hour.

Pour steak sauce over steaks (both sides) then pour Worcestershire sauce over steaks the same way.

Let marinate for a minimum of two hours or over night, turning twice to make sure steaks are fully covered.

Fire up your charcoal.

Place steaks on barbeque and cook for 8-12 minutes per side depending on thickness of meat and if you want the steaks medium rare or well done. We like our steaks medium rare and only cook 8 minutes per side.

Remove from grill. Let rest on foil covered plate for 5 minutes before serving.

Spinach And Cheese Stuffed Mushrooms

(I forgot to take photos of the whole process)

Ingredients:

  • 12-24 medium or large size Italian Brown Mushrooms (also called Baby Bellas), washed with stems & gills removed
  • 1 bunch of fresh baby spinach, washed, roughly chopped
  • salt & pepper to taste
  • ½ cup shredded mozzarella cheese
  • ½ cup shredded Parmesan cheese
  • 1 teaspoon of lemon juice (optional)
  • 2 teaspoons butter
  • 1 teaspoon extra virgin olive oil

Heat butter & olive oil in pan until butter is melted. Add spinach and cook until just wilted, adding lemon juice, salt & pepper to taste.

Drain spinach and place in mixing bowl.

Mix in mozzarella and Parmesan, reserving some for topping.

Stuff mixture into mushrooms

Top with remaining cheese

Bake on cookie sheet for 10-14 minutes at 350 degrees.
